that is yellow, firm
and
tinged-with-green
is ever-ready for you
Twice-fried
Tostones.
Potato-y and filling

but

if you wait
for the soft one
squeezing her
along the length of her curve
each day
leaving the memory of your fingers
in her skin
she becomes
Maduros.
Sweet, pulpy flesh
Sticky to the knife
Amarillos.
She will fry up
Nice
her edges crisp
her center
Melting hot.
